Seeking Restaurateur for Private Island Eco-Lodge

We’re looking for a restaurateur who is up for a once in a lifetime opportunity to open a restaurant on private island in Lake Nicaragua near Granada. We will be opening a small boutique eco-lodge in early-2014 and seek a complementary restaurant to serve our guests and visitors to the island (up to 24 covers per day). We feel that the market calls for a tapas / small plate restaurant using fresh, local, organic, and seasonal ingredients.

The ideal person to open this business will be adventuresome, imaginative, resourceful, and passionate. Like us.

We will provide the space, furniture, and fixtures. The operator would provide cookware, small appliances, small wares, table settings, etc. The kitchen will include a gas range, griddle, wood-fired pizza / bread oven, and BBQ in addition to all the requisite counters, sinks, prep areas, etc. Because we are off-the-grid, refrigeration will be available but of limited capacity.

In order to help get the restaurant off the ground and to avoid some complicated steps in setting up the business, the operator would act as an independent contractor and all staff could be employed by our company on behalf of the operator. All profits from the restaurant operation are retained by the operator (minus a modest rent and the requirement to provide guests of the lodge with breakfast).

To ensure serious candidates only who will commit to the project, a $9000 upfront investment will be required upon contract execution. The investment, minus rent and administrative costs, will be returned over the course of a two-year agreement in 24-monthly payments. The operator will also enjoy exclusive catering rights for all weddings and preferred rights for other events.

Because we are an island and need to get visitors back to town, the restaurant will likely conclude service around 7 – 7:30 pm each evening. The bar will stay open a little later.
